Tasty Treats: Zucchini Fritters

I absolutely love zucchini. I am always looking for new ways to make it. I search and search for new zuchinni recipes. This one is the best zucchini recipe I have made. I kind of just winged it. I recently bought a cheese grater at The Dollar Tree for a buck. (I love that place.) Yay! Shredded zucchini (and only one little nick out of my knuckle)!
Grate you zukes into a bowl. They shredded up fast. I was the only one eating so a medium zucchini was enough for me. This recipe is pretty flexible so it should be easy to increase.
Put shredded squash into a tea towel. I used a flour sack towel.
Squeeze out all the extra water.
Add a couple palmfuls of bread crumbs, 1 palmful of grated parmesan cheese, 1 quickly whisked egg, 1/4 tsp of onion powder, and a pinch of salt. Stir to combine. Either spray your pan with oil or add a pat of butter to a hot pan. I may or may not have used butter. (I did. It was delish.)


Scoop out a big spoonful and put it in the hot pan smoosh it into a patty. Yup, smoosh. Flip after 3 or 4 min over low/med heat.
Take them out when they are a brown and crispy on the outside and tender on the inside. Serve hot. Nom, nom, nom. This was so delicious and super quick. I got Gavin to take a nibble. "I like the egg part but not the zucchini part." (From the kid that gets ticked that McDonald's doesn't put steamed broccoli in their happy meals. Not thrilled about zucchini.) I loved them. I gobbled all 3 fritters all by myself. I think my granny would love these. She and I share a zucchini love.
